Ingredients
  

Tomatillo Sauce
  • 1 tbsp olive oil
  • 1 lb tomatillos hulls removed
  • 1 onion
  • 2 tsp garlic-minced
  • 1 poblano pepper
  • ¾ tsp cumin
  • Salt & pepper
  • 1 cup cream
Filling
  • 1 rotisserie chicken shredded
  • 1 can diced tomatoes drained
  • cups cheese
  • 2 handfuls spinach blended or 1 cup riced cauliflower
  • 2 tbsp lime juice
  • 12 (6 inch size) corn tortillas

Equipment

  • 9x13 casserole dish
  • Dutch Oven or Skillet
  • Immersion blender (or standard blender)
  • Mixing Bowl

Method
 

  1. Sauté tomatillos, onion, garlic, poblano, and spices. Blend with cream.
  2. Mix filling ingredients together.
  3. Layer tortillas, filling, and sauce in a casserole dish. (See above for specifics)
  4. Top with cheese.
  5. Bake at 400°F for 20–25 minutes.
  6. Rest before serving.

Notes

There’s something about a bubbling pan of enchiladas coming out of the oven that instantly makes dinner feel warm, comforting, and gathered-together cozy.
