Method
- Add lemon juice, garlic, cumin, olive oil, salt, and pepper to a Mason jar. Secure the lid and shake until combined.
- In a medium bowl, combine chickpeas, green onions, roasted red pepper, parsley, and any other vegetables or herbs you're using.
- Pour the lemon dressing over the chickpea mixture and gently stir to combine.
- Allow the mixture to rest for 15 minutes at room temperature, or cover and refrigerate overnight.
- Just before serving, gently fold in the drained salmon or tuna and cheese.
- Top with additional fresh herbs and black pepper.
- Serve with crackers, toasted sourdough, or over mixed greens.
