Method
- Preheat oven to 400°F and prepare a 9x12 casserole dish or baking sheet.
- Finely dice onion and chop sun-dried peppers.
- In a large bowl, combine all ingredients. Mix gently until just combined.
- Shape into an 8-inch long loaf and place in the prepared dish.
- Bake 40–50 minutes, until internal temperature reaches 165°F.
- Rest 15 minutes before slicing and serving.
Notes
- Do not overmix to keep the loaf tender.
- Letting the loaf rest helps it hold together and stay juicy.
- A loaf pan isn’t the best choice for baking a meat loaf. By using a 9x12 casserole pan in metal or ceramic this allows the heat to circulate around the meat, cooking it evenly.
