Simple Roasted Carrots and Vegetables

Ingredients
  

2–3 cups mixed vegetables (carrots, broccoli, Brussels sprouts, peppers, onions)
2 tbsp olive oil
2 cloves garlic, minced
Salt & pepper, to taste

Equipment

  • Baking Sheet
  • Parchment Paper or Silpat Mat

Method
 

Preheat oven to 425°F.
    Chop vegetables into even pieces.
      (Optional) Microwave carrots with water for 4–5 minutes, then drain.
        Toss vegetables with olive oil, garlic, salt, and pepper.
          Spread on baking sheet in a single layer.
            Roast 20–25 minutes, stirring halfway through.
              Serve warm.

                Customize with your favorite vegetables
                Add lemon or parmesan after roasting
