Sourdough Lime Scones

Tender, flaky sourdough lime scones bursting with fresh citrus flavor. A perfect way to use sourdough discard and enjoy a bakery-style treat at home.

Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour 287g
  • 5 tablespoons sugar 63g
  • 1 tablespoon baking powder 10g
  • ½ teaspoon salt 3g
  • Zest from 2 limes
  • 6 tablespoons cold butter 73g, cubed
Wet Ingredients
  • cup half-and-half 150g
  • 1 teaspoon vanilla extract 5g
  • 2 tablespoons fresh lime juice 25g
  • 100 g sourdough starter or discard
Optional Glaze
  • 1 cup powdered sugar
  • 2–3 tablespoons lime juice
  • Additional lime zest

Method
 

  1. Whisk together flour, sugar, baking powder, salt, and lime zest.
  2. Cut cold butter into flour mixture until crumbly.
  3. Whisk together half-and-half, vanilla, lime juice, and sourdough starter.
  4. Stir wet ingredients into dry ingredients until just combined.
  5. Turn onto floured surface and gently knead 5 times.
  6. Shape into a 1-inch thick circle and cut into 8 wedges.
  7. Refrigerate 30 minutes or overnight.
  8. Preheat oven to 425°F.
  9. Brush tops with half-and-half and sprinkle with sugar.
  10. Bake 12–15 minutes until lightly golden.
  11. Cool on a wire rack and serve.

Notes

Keep ingredients cold for the flakiest texture.
Delicious with or without a lime glaze.
Freeze cooled scones for up to 3 months.
