Ingredients
  

Turkey
  • 1 tbsp olive oil
  • 1.5 lbs ground turkey
  • 1 onion chopped
  • 2 tsp garlic minced
  • Salt & pepper
  • 2 tbsp soy sauce
Peanut Dressing
  • cup peanut butter
  • ¼ cup lime juice
  • 2 tbsp soy sauce
  • 2 tsp fish sauce
  • 1-2 tbsp water optional for thickness of dressing
Salad
  • 2 packages ramen noodles
  • 10 oz slaw mix
  • 1 cup edamame
  • cup roasted peanuts or cashews
  • 3 tbsp fresh herbs

Method
 

  1. Sauté onion and turkey until browned. Add garlic, soy sauce, salt, and pepper.
  2. Whisk together peanut dressing ingredients.
  3. Cook noodles according to package directions. Rinse with cold water.
  4. Combine noodles, turkey, slaw, edamame, nuts, herbs, and dressing.
  5. Toss and serve chilled or cool.
