Ingredients
- Ground Turkey
The base of the loaf, keeping things lighter and healthier than traditional beef while still tender and satisfying. Using turkey with a little fat helps prevent dryness. - Onion
Adds moisture and a subtle sweetness that deepens the overall flavor of the loaf as it bakes. - Sun-Dried Peppers
These bring a concentrated, slightly tangy sweetness that makes the loaf feel extra special and packed with bold flavor. - Egg
Acts as the binder that helps hold everything together while giving the loaf a soft, tender texture. - Dijon Mustard
Adds a gentle tang and depth that enhances the savory ingredients without overpowering the dish. - Parmesan
Provides salty, nutty richness while helping create a beautifully savory loaf. - Salt & Pepper
Simple but essential for balancing and highlighting all the flavors. - Parsley– Flat leafed chopped to give a fresh taste as well as add moisture. (optional)
9. Bread Crumbs

All ingredients listed below with exact amounts needed.

Steps:
1. Preheat the oven (Unless you are letting it rest overnight or later that day).
Preheat your oven to400°F and lightly grease a 9×12 casserole dish or line a baking sheet with parchment. I find that by placing the loaf shaped meat in the center of the casserole dish allows the oven air to circulate around the meat cooking it more evenly.
2. Prep the ingredients
Finely dice the onion and chop the sun-dried peppers so they distribute evenly throughout the loaf.
3. Mix the loaf
In a large bowl, combine ground turkey, onion, sun-dried peppers, egg, Dijon mustard, Parmesan, parsley, breadcrumbs, salt, and pepper.

Steps:
4. Gently combine
Mix just until everything is incorporated. Overmixing can make the loaf dense.
5. Shape the loaf
Form into a loaf shape and place into the prepared pan or onto the baking sheet. Remember to place the loaf shape in the middle of the pan so that the warm oven air circulates around crisping up 3 sides of the meat.

Steps:
6. Bake
Bake for 40–50 minutes, or until the internal temperature reaches 165°F.
7. Rest before slicing
Let the loaf rest for about 5–10 minutes so it holds together and stays juicy. Slice and enjoy. This loaf pairs perfectly with my Creamy Garlic Mashed Potatoes, or see below for my other options.
Tips & Tricks
- Assemble the Night Before-let those flavors marry together to receive the most packed flavored dinner.
- Do not overmix to keep the loaf tender.
- Letting the loaf rest helps it hold together and stay juicy.
- A loaf pan isn’t the best choice for baking a meat loaf. By using a 9×12 casserole pan in metal or ceramic this allows the heat to circulate around the meat, cooking it evenly.
