Juicy Sun-Dried Tomato Turkey Loaf

There’s something so comforting about a homemade meat loaf fresh from the oven — especially when it’s packed with bold, savory flavor. This sun-dried tomato turkey loaf is juicy, tender, and filled with Mediterranean-inspired goodness, turning simple ground turkey into a cozy dinner that feels a little special but couldn’t be easier to make.

Steps:

1. Preheat the oven (Unless you are letting it rest overnight or later that day).
Preheat your oven to400°F and lightly grease a 9×12 casserole dish or line a baking sheet with parchment. I find that by placing the loaf shaped meat in the center of the casserole dish allows the oven air to circulate around the meat cooking it more evenly. 

2. Prep the ingredients
Finely dice the onion and chop the sun-dried peppers so they distribute evenly throughout the loaf.

3. Mix the loaf
In a large bowl, combine ground turkey, onion, sun-dried peppers, egg, Dijon mustard, Parmesan, parsley, breadcrumbs, salt, and pepper.

4. Gently combine
Mix just until everything is incorporated. Overmixing can make the loaf dense.

5. Shape the loaf
Form into a loaf shape and place into the prepared pan or onto the baking sheet. Remember to place the loaf shape in the middle of the pan so that the warm oven air circulates around crisping up 3 sides of the meat.

6. Bake
Bake for 40–50 minutes, or until the internal temperature reaches 165°F.

7. Rest before slicing

  • A loaf pan isn’t the best choice for baking a meat loaf. By using a 9×12 casserole pan in metal or ceramic this allows the heat to circulate around the meat, cooking it evenly.

Ingredients
  

  • 1 1/2 Pounds Ground Turkey
  • 1 Small Yellow Onion
  • 1/2 cup Breadcrumbs- I like Panko, but Regular will work great!
  • 1 Egg beaten
  • 2 TBSP Dijon Mustard
  • 1 cup Parmesan grated
  • 1 cup Parsley chopped
  • 2/3 cup Sun-Dried Tomatoes 1-7oz jar works too! Dice.
  • 3/4 tsp Salt
  • 1/2 tsp Pepper

Equipment

  • 1 9×12 Casserole Pan
  • 1 Mixing Bowl

Method
 

  1. Preheat oven to 400°F and prepare a 9×12 casserole dish or baking sheet.
  2. Finely dice onion and chop sun-dried peppers.
  3. In a large bowl, combine all ingredients. Mix gently until just combined.
  4. Shape into an 8-inch long loaf and place in the prepared dish.
  5. Bake 40–50 minutes, until internal temperature reaches 165°F.
  6. Rest 15 minutes before slicing and serving.
