Step 1: Cook the Pasta

Bring a large pot of salted water to a boil and cook the orzo according to package directions. Drain and return to the Dutch oven or large serving bowl.

Step 2: Heat the Sausage

Meanwhile, heat a drizzle of olive oil in a Dutch oven or skillet over medium heat. Sear the chicken sausages until warmed through and lightly browned.

Remove sausages from the pan and slice into rounds, leaving any flavorful juices behind in the pot.

Ingredients
  

  • ½ box orzo pasta
  • ½ cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 2–4 chicken sausage links sliced
  • 1 pint cherry tomatoes halved
  • 1 cucumber chopped
  • 1 cup Kalamata olives halved
  • 1 cup cubed mozzarella cheese
Optional Additions
  • Avocado, chickpeas, bell peppers, eggplant, spinach, fresh basil, onion, feta cheese

Method
 

  1. Cook orzo according to package directions. Drain and return to pot.
