This fresh Chickpea Salmon or Tuna Salad is packed with protein, bright lemon flavor, and colorful vegetables. A quick, no-cook summer meal!

It comes together quickly with protein-packed chickpeas, canned salmon or tuna, fresh vegetables, creamy goat cheese or feta, and a bright lemony dressing. The flavors have just enough time to mingle together, making every bite fresh, savory, tangy, and satisfying.
I especially love that you can do most of the preparation ahead of time. Make the chickpea mixture and lemon dressing the night before, then add the salmon or tuna and cheese right before serving. It makes this salad perfect for those busy summer days when you’re racing between activities, or for packing up as a picnic dinner with a handful of crunchy crackers.

Steps 1. Make the Lemon Dressing
Add the lemon juice, minced garlic, cumin, olive oil, salt, and pepper to a pint-sized Mason jar.
Place the lid on securely and shake until the dressing is well combined.
This is a fun job for the kids, too! I usually hand the jar to whoever is nearby and let them give it a good shake.

In a medium mixing bowl, combine the drained and rinsed chickpeas, green onions, roasted red peppers, parsley, or whatever combination of vegetables and herbs you’re using.
If using fresh tomatoes, wait to add them until just before serving. They can release quite a bit of liquid and make the salad watery if they sit overnight.
Drizzle the lemon dressing over the chickpea mixture and gently stir to combine.
Allow the mixture to sit at room temperature for about 15 minutes so the flavors can mingle, or cover and refrigerate overnight.

- Add a little more olive oil and a pinch of salt. You can also add a small amount of honey or maple syrup if you prefer a slightly sweeter dressing.
- My salad became watery.
- Fresh tomatoes and other juicy vegetables can release liquid as they sit. Drain off excess liquid and add fresh vegetables just before serving next time.
- The salad tastes bland.
- Give it a little more salt, freshly ground pepper, lemon juice, or cumin. Chickpeas can handle plenty of seasoning.
- Can I make this without fish?
- Absolutely! Leave out the salmon or tuna and add extra chickpeas, white beans, grilled vegetables, or another protein of your choice.
